While there are many similarities, pullulan is generally produced by different chemical processes than gelatin. Pullulan production begins with mixing water and corn starch or wheat starch. This is then followed by a process known as hydrothermal treatment. This process involves mixing the starch mixture with water, heating it to 160 degrees Celsius, and then cooling it as quickly as possible. During this process, the starch molecules become “polysaccharides,” which is a chemical term for a large group of carbohydrates. The final product is a thick, gelatinous liquid. This liquid is cooled and then hydrolyzed, which means that it is broken down with chemicals to produce a type of glucose. During the final step, the glucose is polymerized, or chemically combined with other glucose molecules to form long chains of pullulan.
